Translation
of the word Sushi:
The translation is simple and means : rice dressed with vinegar usually topped
with raw, marinated or cooked fish, shellfish, vegetables or eggs.
The Birth of Sushi
The Origin of Sushi is the process of raw fish preservation using salt and rice.
That process has been traced back to Southeast Asia. Later during the Muromachi
period (1336-1573), Japanese added vinegar to the mixture for better taste and
preservation. Indeed, the vinegar produced from fermenting rice breaks the fish
down into amino acids and increases the period of preservation of the fish.
Starting as a side dish, Sushi became progressively
a meal itself. It is only in the Edo Period (1603-1867) that we began
to classify Sushi in categories sush as futomaki, chirashizushi, oshizushi.
